30-Minute One-Pot Cheesy Potato and Chicken Casserole

Fast, creamy one-pot casserole with chicken, potatoes, and cheese—ready in 30 minutes for an easy, satisfying family dinner!

Equipment

  • Large oven-safe skillet or Dutch oven, cutting board, knife, measuring cups, wooden spoon.

Ingredients
  

  • - 1 ½ lbs chicken breast diced
  • - 4 medium russet potatoes diced
  • - 1 tbsp olive oil
  • - 1 tsp garlic powder
  • - ½ tsp paprika
  • - 1 tsp salt
  • - ½ tsp black pepper
  • - 1 ½ cups shredded cheddar cheese
  • - ½ cup sour cream
  • - ½ cup milk or chicken broth
  • - 4 slices bacon cooked and crumbled (optional)
  • - 2 green onions sliced

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Heat oil in large oven-safe skillet over medium-high heat. Add diced chicken; season with garlic powder, paprika, salt, and pepper. Cook 5–6 min until browned.
  • Add diced potatoes to skillet; stir and cook 5 min.
  • In a bowl, mix sour cream, milk, and half the cheese. Pour over chicken and potatoes; stir well.
  • Top with remaining cheese and bacon (if using). Transfer skillet to oven.
  • Bake 15–18 min until potatoes are tender and cheese is bubbly.
  • Garnish with green onions and serve hot.

Notes

Use pre-cooked rotisserie chicken for faster prep. Swap in sweet potatoes or add broccoli for variety.
