Easy One-Pot Roasted Potato and Sausage Bake

A simple, hearty one-pan dinner featuring golden roasted potatoes, smoky sausage, and colorful peppers. Ready in just 35 minutes with minimal cleanup!

  • Large mixing bowl
  • Sharp knife
  • Cutting board

Ingredients
  

  • 1 lb smoked sausage or kielbasa sliced into 1/2-inch rounds
  • 1.5 lbs red or Yukon gold potatoes cut into 1/2-inch cubes
  • 1 large red bell pepper diced
  • 1 large yellow bell pepper diced
  • 1 medium red onion sliced
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Fresh parsley for garnish optional

Instructions
 

  • Preheat oven to 400°F. Line a large sheet pan with parchment paper or lightly grease with cooking spray.
  • In a large bowl, combine sliced sausage, diced potatoes, bell peppers, and red onion.
  • Drizzle olive oil over the mixture. Add garlic powder, smoked paprika, oregano, basil, salt, and black pepper.
  • Toss everything together until evenly coated with oil and seasonings.
  • Spread the mixture in a single layer on the prepared sheet pan, making sure not to overcrowd.
  • Roast in preheated oven for 30-35 minutes, stirring halfway through, until potatoes are golden and fork-tender.
  • Remove from oven and let rest for 3-5 minutes. Garnish with fresh parsley if desired.
  • Serve hot directly from the pan and enjoy!

Notes

For extra crispy potatoes, make sure they're spread in a single layer without overlapping. This recipe stores well for up to 4 days in the fridge and reheats beautifully. Use turkey sausage for a lighter version.
