Holiday Stuffed Mini Peppers – Festive Appetizer

Colorful mini peppers stuffed with creamy cheese, fresh herbs, and festive flavor—easy, crowd-friendly appetizer for parties, snacks, or healthy lunches!

Equipment

  • Baking tray, mixing bowl, spoon, paring knife, serving platter.

Ingredients
  

  • - 1 lb mini sweet peppers
  • - 8 oz goat cheese or cream cheese softened
  • - 1/2 cup shredded cheddar or mozzarella
  • - 2 tbsp fresh herbs parsley, chives, thyme
  • - 1/2 tsp black pepper
  • - 1/4 tsp garlic powder
  • - 1/4 cup chopped pecans or walnuts optional
  • - 1 tbsp olive oil

Instructions
 

  • Preheat oven to 400°F (or prep for chilled version).
  • Slice peppers in half, remove seeds. Place on tray.
  • Mix cheese, shredded cheese, herbs, garlic, pepper, nuts, and olive oil in bowl.
  • Fill each pepper half with mixture. Bake 10–12 min or serve chilled.
  • Garnish with extra herbs and serve on platter.

Notes

Mix and match cheese and herb combos. Bake for extra melty flavor or serve fresh for speed.
