Korean-Inspired Ground Beef Bowls (15 Minutes)

These Korean-inspired ground beef bowls combine seasoned beef in a sweet-savory sauce with soy sauce, brown sugar, and sesame oil, served over rice. Ready in just 15 minutes!

Ingredients
  

  • pounds ground beef
  • 4 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • cup low-sodium soy sauce
  • ¼ cup brown sugar packed
  • 2 tablespoons sesame oil
  • 1 tablespoon rice vinegar
  • ½ teaspoon red pepper flakes
  • 1 teaspoon sriracha or gochujang optional
  • 3 cups cooked white or brown rice
  • 4 green onions sliced
  • 1 tablespoon sesame seeds
  • Lime wedges optional

Instructions
 

  • Start cooking rice according to package directions.
  • In small bowl, whisk together soy sauce, brown sugar, sesame oil, rice vinegar, red pepper flakes, and sriracha. Set aside.
  • Heat large skillet over medium-high heat. Add ground beef, break apart, cook 5-6 minutes until browned.
  • Drain excess fat, leaving about 2 tablespoons.
  • Push beef to sides, add garlic and ginger to center. Cook 30-60 seconds until fragrant.
  • Pour sauce over beef, stir to combine. Simmer 2-3 minutes until sauce thickens.
  • Remove from heat, stir in half the green onions.
  • Divide rice among 4 bowls. Top with beef mixture.
  • Garnish with remaining green onions, sesame seeds, and lime wedges.
  • Mix thoroughly before eating and enjoy!

Notes

Use fresh ginger for best flavor.
Adjust brown sugar and red pepper flakes to taste.
Add vegetables like carrots or broccoli for extra nutrition.
Stores well for meal prep up to 4 days.
Can freeze cooked beef up to 3 months.
