Peppermint Protein Brownies – Better-for-You Holiday

Fudgy chocolate brownies with a festive peppermint twist and extra protein—perfect for healthy snacking, dessert trays, or holiday gifting!

Equipment

  • 8x8 baking pan, parchment paper, mixing bowls, spatula, hand mixer.

Ingredients
  

  • - 10 medjool dates pitted
  • - 3 scoops chocolate or vanilla protein powder about 33g/ea
  • - 1 cup almond flour
  • - 1/4 cup cocoa powder
  • - 1/3 cup cashew or almond butter
  • - 1 tsp vanilla extract
  • - 1 tsp peppermint extract
  • - 1/3 cup dairy-free milk plus 1–2 tsp if needed
  • - 2 large eggs optional for baked brownies
  • - 1/2 cup date-sweetened chocolate chips or semi-sweet chips
  • - 1/4 cup full-fat coconut milk for ganache, optional
  • - 1/4 cup crushed peppermint candies

Instructions
 

  • Preheat oven to 350°F (skip if making no-bake).
  • Blend dates until sticky. Mix in protein powder, almond flour, cocoa, nut butter, vanilla, peppermint, and milk.
  • For baked version, add eggs and mix until just combined. Spread in lined pan.
  • For ganache, melt chocolate chips and coconut milk till smooth; pour over base.
  • Sprinkle crushed peppermint over top. Bake 20–22 min (or chill no-bake until set). Slice and serve.

Notes

Use almond flour for gluten-free. Adjust peppermint for stronger flavor. No-bake option skips eggs and oven.
