Tater Tot Casserole (Cheesy + Easy)

This taco tater tot casserole combines seasoned ground beef with salsa, beans, corn, and layers of melted cheese, all topped with crispy tater tots. Easy comfort food!

Ingredients
  

  • pounds ground beef
  • 1 small onion diced
  • 1 packet 1 oz taco seasoning
  • cup water
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz corn, drained
  • 1 cup salsa
  • 1 can 4 oz diced green chiles
  • ½ teaspoon garlic powder
  • ½ teaspoon cumin
  • 2 cups shredded cheddar cheese divided
  • 1 cup shredded Monterey Jack cheese
  • ½ cup sour cream
  • 32 ounces frozen tater tots

Instructions
 

  • Preheat oven to 375°F. Spray 9x13-inch baking dish with non-stick spray.
  • Brown ground beef and onion in large skillet over medium-high heat, 7-8 minutes.
  • Drain excess fat, leaving about 1 tablespoon.
  • Add taco seasoning and water. Simmer 2-3 minutes until absorbed.
  • Stir in black beans, corn, salsa, green chiles, garlic powder, and cumin. Cook 2-3 minutes.
  • Remove from heat. Stir in sour cream and 1 cup cheddar cheese.
  • Spread beef mixture evenly in prepared baking dish.
  • Sprinkle Monterey Jack and ½ cup cheddar over beef layer.
  • Arrange frozen tater tots in single layer on top.
  • Bake 40-45 minutes until tots are golden brown and crispy.
  • Sprinkle remaining ½ cup cheddar over tots. Bake 3-5 minutes until melted.
  • Let rest 10 minutes before serving. Top with favorite taco toppings.

Notes

Don't thaw tater tots before baking.
Drain beans and corn thoroughly to prevent watery casserole.
Can assemble 24 hours ahead and refrigerate before baking.
Freezes well up to 3 months.
Customize spice level with salsa heat and green chiles.
