For the crust:
- 1 cup almond flour
- 2 tablespoons melted butter
For the filling:
- 2 cups cream cheese low-fat recommended
- 1 cup heavy cream
- 3/4 cup sugar substitute stevia or erythritol
- 1 teaspoon vanilla extract
Preheat Oven:
Preheat oven to 350°F (175°C).
Prepare the Crust:
Mix almond flour and melted butter in a bowl. Press the mixture evenly into the base of a springform pan. Bake for 10–15 minutes until lightly golden.
Mix the Filling:
In a separate bowl, combine cream cheese, heavy cream, sugar substitute, and vanilla extract. Beat until smooth and creamy.
Assemble & Bake:
Pour the cheesecake mixture over the baked crust. Smooth the top. Bake for 45–50 minutes or until set in the center.
Chill:
Allow the cheesecake to cool to room temperature, then chill in the fridge for at least 4 hours (or overnight) before serving.
